There seems to be some debate as to whether icewine ages. This icewine, at almost a decade already, should put these rumours to rest. Of course icewine ages. The difficulty is that few people try enough icewine to appreciate the potential differences in young and old icewine.
The colour has a lovely ruby colouration, with just a touch of bricking towards the center.
The aromas on young icewine can explode out of the glass. This one is more subtle, but very complex still.
The youthful vitality of the fruit are changing into more stewed fruit notes - as happens with most wines. Fresh strawberries and cranberries, but also orange zest, and rhubarb.
The flavours are delicate and jammy - cherry and strawberry. There are some subtle savoury spice notes that could come from the Mourvedre or the Syrah in this blend, but it is probably predominantly Cabernet Franc (as it should be, in Ontario).
Icewine doesn't need to be paired with dessert - piling sweet on sweet. Why not be more adventurous? This wine would pair great alongside a spicey Malaysian coconut curry.

Garnet in colour with aromas of ripe strawberries and rhubarb and it tastes like ripe strawberries drizzled in honey. This 2007 Cabernet ice wine has aged well and is balanced nicely. Pair with strawberry shortcake, apple pie or enjoy it on its own. Red Ice wine is always a rare treat, enjoy it if you can.

Beautiful ruby-garnet hue, with notes of prune, honey and wild strawberry on the nose. Wow, this wine has aged amazingly well over the past decade and is not as sweet as the nose lets on. It still has lots of mouthwatering acidity, with the same honey and strawberry notes from the nose on the palate. Perfect pairing for strawberry rhubarb pie, or as an after-dinner sipper on its own.

This is a perfect bottle to bring for a Christmas gathering. Very festive in its ruby red colour and flavours. Christmas in a bottle. Beautiful ruby colour. Tastes of very ripe strawberry and hints of baking spices. Pair with a cranberry apple pie or desserts that have baking spices (ginger, clove or nutmeg).

A beautiful colour and nicely balanced. This wine is a blend of Cabernet Franc, Cabernet Sauvignon, Mouvedre, and Syrah. Tastes of luscious strawberry cream. Enjoy after a meal and in front of a nice fire. Delicious.
