Flat Rock Cellars Riddled exemplifies the fine sparkling wines that Ontario, Canada is producing following the traditional method that the world has loved for centuries. Orchard fruits and toasted bread dominate the nose and palate while the fine bubbles coat the palate and leave you refreshed and anticipating the next sip. Sparkling wine has a bright future in Canada, thanks to our rather dramatic weather, but only in the hands of a winemaker skilled in cool-climate style.
Jay Johnston (winemaker/cellar master) will effusively engage you, if you ask him what sets his sparkling apart. Aside from being lees aged for four years and recently disgorged, he is very strict about keeping to the champenoise rules for quality extraction - making sure he doesn't over extract or use unsuitable juice. Another nice touch, which is hard to find and adds depth, is that he barrel ages the base wine before it undergoes secondary to become bubbly.
Lovely aromas of apple turnover and cinnamon. Flavours of salted taffy, bruised pie apples, vanilla, cream, and toast.
One of the most rewarding discoveries I have had in Ontario wine, this year.

A superb sparkling from Flat Rock topped with a crown cap too! Ripe fruit aromas and flavours include: apple, peach, pineapple, and buttered toast. This wine is uber refreshing with a long mouthwatering finish. Enjoy with Christmas turkey. Tasted Nov 2015.

Aromas are mostly pear and green apple, with a slight note of toasted bread. Lots of pear on the palate along with some minerality. Crisp and fresh, bubbles are soft, but persistent. Fantastic wine for fresh shellfish.

The 2009 vintage of Riddled is 92% Chardonnay and a hint of Pinot Noir from Flat Rock Cellars, Niagara Twenty Mile Bench VQA. At 12% ABV, and with a unique crown cap, this wine is a wonderful traditional method sparkling. Aromatics of crisp apple, freshly baked bread crust, stone fruit and minerality. Medium finish with persistence of crisp pear and sliced apple. This is an elegant wine which pairs well with almost any dish or on its own. Ready to savour now.

The bottle is sealed with a crown cap (like beer), which apparently is the best way to seal bottles. It sure works on keeping the aromas fresh here. Lots of bready apple, pear, apricot and minerality. The taste is right in line with the aromas. Bright, sparkling aciity and tiny bubbles make this a very refreshing sparkling wine.

Flat Rock Riddled Sparkling 2009, Niagara Peninsula, Ontario V.Q.A., Canada: Clean, crisp Ontario sparkling wine with a refreshing finish. Notes of green apple and stone fruit. The beer-bottle crown cap allows the bubbly to continue to develop flavours and bubbles (just as they do in Champagne before finally sealing it with the mushroom-shaped large cork).
