Nose is very typical of a cooler climate cab sauv, with prominent printers ink and lead pencil aromas, overshadowing a core of red fruits poking up through the darkness. Simply elegant on the mid palate, tart wild berry fruit is predominant, with hints of creamed coffee, clove and allspice. Acidity gives way to the fruit on the back, finishes up with an appetizingly savory note. Hard cheeses, steak and kidney pie, portobella mushrooms in a gorgonzola sauce.

Lots of red jammy aromas with a hint of smoke. Layered palate with ripe strawberry and raspberry jam, mint, mocha, eucalyptus and forest floor. Spicy dark fruit finish.

The 2012 Tic Tok Cabernet Sauvignon is a fine expression of a more delicate style Cabernet that has been crafted with care to permit its varietal characteristics to shine. Stylistically more delicate than what many may expect from an Australian Cabernet, and that’s on purpose. Medium ruby red with the nose displaying blueberry, blackberry, prunes, followed by interesting layers of savory beetroot, tea leaves, incense, and smoked meats. Medium bodied, this refreshing lighter style of Cabernet would pair well with a wide range of dishes from beet salad to grilled venison. Tasted October 2014. Matt Steeves – www.NatalieMaclean.com
