Now we're getting into some serious Australian Cabernet! Very elegant, with aromas of cassis, leather, tobacco and a clay-like minerality. It's not often that New World wines display a notion of terroir, and this one is a refreshing take on the concept. Well-made.

This full-bodied wine has flavours of Black currant, black berry, black cherry, and cloves, with a savoury complexity. The firm tannins, and refreshing acidity carry the flavours on the long, elegant finish.
Pair with grilled beef or lamb chops.
Drink now or cellar until 2024. This wine will improve with age as the tannins soften and it gains complexity.

Strong layers of eucalyptus, anise, bacon, leather and cedar make this a wow factor wine. Definitely one to decant before diving in! Persistent tannins and a long spicy finish makes this wine a wonderful pairing with a sirloin steak.

Lots of amazing mint, eucalyptus, cedar and smokiness are the first aromas to hit you, followed by cassis and blackberry. The mintiness even comes through in the taste, mingling nicely with the fruit. Nice round tannins and a long cassis, tart cherry and smoke finish. A wonderful wine on its own or pair with herbed roast beef.

This Cab Sauv has notes blackberry, cassis, spice, smoke and dust. A nicely balanced wine with a good dose of acid and tannin, which makes this an excellent food wine for heavy red meats with a hearty sauce.

Nov 16, 2014: Deep ruby, lovely nose with cassis/red currant, green herb/eucalyptus, oak spice, mineral. Full bodied, dense, ripe red/black fruit followed by dried herb, toasty/smoky cedar, mineral, and a wall of fine tannins kept in check by the fruit and acidity. Long finish. Quality young wine with 10-15 years of life ahead or decant for a few hours with fatty proteins now if you can't wait.

Dense deep red with aromas of asian spices, dried lemongrass, star anise, blackcurrant and dusty oak notes. The palate shows natural, mouthwatering acidity balanced by complimentary stylish oak and a lithe, sinewy texture. It is mouthfilling, yet long and defined.

Penfolds Bin 407 Cabernet Sauvignon 2011, South Australia, Australia: A hallway breeze of minty cool rushes out of the glass, then you open the door to fleshy black fruit on the palate and a lovely long finish. Full-bodied, smooth. This is a flagship wine for Australia, from a master producer. Great complexity, balance, structure and depth. It will do well in the cellar, but I challenge you to wait as it's terrific now! Decant 1-2 hours. Try it tonight with rare filet mignon. Highly recommended.
