Using the flow of gravity to treat the grapes as gently as possible. Thus the name Gravity for this 2011 Pinot Noir from Flat Rock Cellars.
Medium ruby colour with medium intesity aromas of raspberry, strawberry, vanilla, toasted oak, rose water, sweet spices.
Medium weight on the palate with notes of baked cherry, roses, pepper, cloves, vanilla, smoke, leather.
This is a youthful XD wine with balanced acidity and velvet tannins. Medium+ length on the elegant red fruit finish. A lovely expression of Ontario Pinot Noir.
Drink now but has potential for ageing.
Food pairings : roast chicken, turkey w/cranberry, pork tenderloin

The 2011 Flat Rock Cellars Gravity Pinot Noir that was aged in French Oak for 18 months has intense aromas of raspberry, toast and subtle wood + vanilla. It is a light to medium bodied, extra-dry, integrated wine, with checked acidity, refined tannins and a long finish. It is food friendly or sip on its own; drink now – 2018+. My impression: NICE to BEAUTIFUL, 89-90 pts. Tasted at 'Taste Ontario 2013' http://grapeselections.com/taste-ontario-2013/ in October/13.
