I love Summerhill Pyramid Winery's Cipes NV Brut. I love the toasty almond, citrusy acidity and the persistent and lively mousse of fresh honeyed apple, pear, pink grapefruit, lime zest that all come together in a crisp and vibrant bubble rush on the palate.

Produced from a cuvée of 70% Riesling, 20% Pinot Noir, 10% Chardonnay and 100% organic, grapes were whole-cluster pressed and fermented in stainless steel before the cuvée was blended and bottled for its second fermentation in bottle in the traditional method. Cipes Brut is off-dry and will pair with most anything. Chill and enjoy anytime and often. Tasted December 2020.

Beautiful! This is an approachable and well priced sparkling blended from Riesling, Chardonnay, and Pinot Blanc. Aromas of green apple. lime, and fresh bread notes. Lots of minerality on the palate, along with bright acidity, and lots of zesty lime. Mousse is vibrant and crisp. Very refreshing! Enjoy with fresh oysters of fried calamari.
