It's made of 59% Pinot Noir, 29% Chardonnay, 8% Gamay completed by 4% Pinot Meunier.
The dosage is made of Vidal Icewine.

Clear salmon color with notes of melon. raspberry, cranberry and cherry.
It's crisp and very long on the palate.

Pair it with seafood.
Serve it at 8-10 degrees.

This is an amazing off-dry sparkler sweetened with a dosage of Ontario icewine. Aromas of field berry, lemon zest, and some fresh bready, yeasty notes. This wine has a beautiful pale pink colour and a fine, fizzy mousse. Off-dry on the palate with bright, vibrant acidity, lots of berry and citrus notes and a crisp finish. Very refreshing and enjoyable, perfect for celebratory toasts, or to accompany a variety of brunch foods.

This bubbly has ice wine characteristics with its aromas of sweet marmalade and dried apricot. There is also peach and red berries. On the palate, there are flavours of marmalade and citrus, a touch of residual sugar and a nice level of acidity.

The colour of this sparkling Rosé was darker than anticipated. It reminds me of framboise which opened the door to stunning strawberry aroma on the nose. A cuveé of Chardonnay (55%), Pinot Noir (35%) Cabernet Franc (10%) with a dosage of Cabernet Franc ICEWINE. It has 16g of residual sugar so you can expect a touch of sweet however this rosé comes off as dry. The perfect marriage of traditional method sparkling with the best of what Niagara has to offer.
