This single vineyard fortified Spanish wine is an acquired taste. Dry, yet it's generally an after-dinner drink given it's strength unless you're still studying at Oxford. Dry and slightly nutty. This would also work at the beginning of the meal with a savoury soup, especially if you add a splash of this sherry to it.

Palomino grapes are the basis of this fortified wine from Spain, which is cask fermented using the solera system of blending multiple years thus there is no vintage on the label. The Fino Inocente made in Jerez is still fermented in 600 litre American oak botas. This is rare and labour-intensive versus fermenting the wine in larger stainless steel tanks that can hold tens of thousands of kilos of grapes. This small lot handling and blending adds great complexity to the finished wine and the average age of the wine tends to be 8 to 10 years old. The Palomino grapes are sourced from the higher elevations of the Macharnudo vineyard, making this a single-vineyard Fino Sherry. - Community Wine Reviews
