The second offering of Sparkling Riesling from Thirty Bench Wine Makers. The first offering combined fruit from Niagara-on-the-Lake and Beamsville Bench vineyards (VQA Niagara Peninsula) and used Steel Post Vineyard Riesling for the dosage, while this second run uses exclusively Beamsville Bench fruit. Traditional method, combining toasty biscuit and yeast with striking green apple, lemon, and white peach. Older Riesling in the dosage adds kerosene, an interesting contrast with the fruitiness of the young Riesling that formed the base wine. Fine mousse, extra dry with bracing acidity, and ideally medium bodied. A good take on what can be a tricky wine to make, balancing autolysis with th potent though delicate aromatics of Riesling. Pair with sushi or charcuterie.

Green apple and citrus lime predominating on the nose, with a hint of white grapefruit. Very light bread notes. Almost a "lime Prosecco" nose.

Bone dry with fruit predominating, the lime carries through with Granny Smith apples. A little more rounded on the palate than the nose suggested, slight dough, great mouthfeel and fine mousse. Nice acid and medium+ length.
