Juicy and savoury, yet with a deliciously attractive note of fleshy sweet blackberry on the nose and palate. This full-bodied, dry red wine is Ontario's leading organic and biodynamic winery hands down. Beautifully supple and rich with a long finish. Pair with a rare juicy steak from grass fed cattle.

A bright garnet red Cab Sauv with good viscosity and inviting aromas of ripe strawberries, cassis, vanilla and sandalwood. A luscious palate shows strawberries and cassis, vanilla, cedar and hints of mint and pepper. Mouth-watering acidity and a long strawberry/cassis finish.

A very lean, cool-climate cabernet sauvignon. It is a little bit on the green/vegetal/unripe side, but is balanced and has just the right amount of oak usage. Aromas of fresh, crisp blackberry, cherry, and raspberry fruit, green bell pepper, pencil shavings, licorice, tobacco, and a bit of vanilla. Repeats on the palate, but the fruit is more tart, with a bit of unripe strawberry character. Medium body and tannins, with medium-high acidity. Good length, finishing with tart red fruit and a touch of bitter chocolate. Definitely a wine that needs food. Would pair well with herb roasted pork dishes or perhaps spaghetti.
Grapes from each vineyard were picked, destemmed and fermented separately in either stainless steel tank or oak vat for an average of 4 weeks. Cap management three times per day until gentle pressing, settling and barrel ageing for 8 months. Barrels were then carefully selected, blended and bottled. No fining.

Nose displays nice depth of dark berried fruit, subtle oak spice and earthy complexity. Palate is round, fruity and framed by fine tannins that lead to a medium long finish with persistent fruit and fine structure.
