A blockbuster, towering Australian red wine made from the country's classic Shiraz grape. Blackened fruit and toasty oak abound on the nose and palate. The fruit for this wine comes exclusively from the cool climate of the Adelaide Hills, and is a blend of four Shiraz clones that are each picked individually and then undergo a wild yeast ferment, with 20% whole-bunch carbonic maceration. The wine is aged in French oak barrels 22 months. Pair with brontosaurus burgers.

Sidewood Mappinga (2013) is a 100% Shiraz sourced from cool-climate Adelaide Hills. Winemaker, Tash Mooney selects Shiraz grapes at premium ripeness. Wine grapes are hand-harvested in the cool of the morning and up to 75% of the grapes are gently pressed with up to 30% of grape berries added whole for a partial carbonic maceration. Fermentation is temperature controlled and once completed the wine is then matured in 80% new and 20% one year old French oak barriques. - Community Wine Reviews
