Big, black and brooding with dark depths of concentrated black fruit, tar, oak and black spice. Needs cellar time then decant for 2-3 hours and pair with brontosaurus burgers.

Food pairings: grilled lamb sirloin with cocoa rub, barbecued duck sausages, grilled pork tenderloin with cauliflower purée and cherry compote, veal chops.

This dark and inky wine is still not showing it's age. Five years on and there's mounds of dark fruit, smoked meat, leather, mocha java, and herbs. The tannins are youthful and acidity a medium+. Enjoy with medium-rare steak or Prime Rib after decanting 2 hours plus. I would love to taste this wine in another 3-5 years. Excellent gift wine.
