Beautiful Friday night, I was craving for Chablis and oysters. Fairmont Pacific Rim Lounge, Vancouver, sounds really good. On the wine list, my dreamed Chablis $18 glass. Food menu, spotted my favorite Kusshi oysters. Delicate wine with citrus aroma of lemon peel, grapefruit and yellow apple. First sip of Chablis, and this zesty acidity will make your mouth watering, extra dry wine with bright minerality. On the palate...has some tangy fruits like peach, apple along with citrus notes of lime and tangerine, very good example of Chablis for this price. This wine has refreshing tingly finish.
Did you know why Chablis and oysters the best match? Millions years ago, Chablis region was an ocean floor with may different sea fossils. Since than, Kimmeridgian Chablis soil is blessed with minerality, which gives Chardonnay grapes its signature notes.
