produced by Collezione Ca' Del Pipa is an Amarone Della Valpolicella Classico. A blend of Corvina, Rondinella and Molinara grape varieties, rich and dense with the flavours of dates, cherry compote, smoke, baked spice and a hint of chocolate. Made in the appassimento style of winemaking, whereby the grapes are dried for several weeks to concentrate the sugars and flavours. Aged in barrique and large botte for two years. Dried jammy fruits, namely prune, raisin, blackberry, plum, and black cherry, intermingle with oak, chocolate, tobacco, and leather. Quite young, dense, restrained, and tight, but it can be coaxed to share its bold character with a vigorous swirl or healthy decant. Tannins are firm yet smooth, acidity potent but balanced, and body is typically full though not excessive. Ideally this bottle will be cellared for another three to seven years, and be served with wild boar ragu or a hearty beef and veggie stew.

A full-bodied Amarone with 70% Corvina, 25% Rondinella and 5% Molinara, this wine has aromas of cherry and spice that continue to the dark fruit and berry palate with some herbal notes. It is well-balanced and has a liquorice-flavoured, dry finish. Decant or age further. Serve with beef, tomato dishes, hard cheeses and dry, smoked meat appetizers. Tasted February 2020.

Fragrant with rich cherry compote, smoky and spicy aromas, dry and mouth-watering with cherry liqueur, blackberry, dark plum, smoky grilled herbs and spicy on the palate. Made in the appassimento style of winemaking, whereby the grapes are dried for several weeks to concentrate the sugars and flavours.
