Lighthall Progression 2022 is a bone-dry Charmat method bubble produced from Vidal grapes sourced from the winery's estate vineyards in Prince Edward County. Medium-bodied, fresh and frothy with lip-smacking acidity, look for ripe peach, apple and apricot flavours balanced with mouth-watering acidity. Try it with panko-crusted pan-fried oysters with a squeeze of lemon juice or with the winery's sheep's milk Feta cheese.

Sparkling food pairings: seafood chowder, grilled lemon sole, fresh steamed shrimp and cocktail sauce.
