This is a completely dry wine even though it is fortified (albeit at the lower end of the alcohol spectrum at just 15%), and has delicate white floral aromas and lightly salted notes of almonds. It makes an excellent companion to fresh seafood and shellfish or as an aperitif with nuts and cheeses. Serve chilled.

Sherry food pairings: scallops with a sesame ginger dressing, spinach and pepper jack stuffed chicken, pasta with tomato sauce, pork tenderloin.

Year after year, this dry sherry over-delivers. Aromas and flavours of nuts, olive brine, citrus, fennel, and crushed stone. Paired excellently with asparagus salad with blue cheese vinaigrette. 92 Points. (ottawawinejournal.com)
This Manzanilla Sherry is produced, aged and bottled at Sanlucar de Barrameda under the proximate influence of the Atlantic Ocean and the Guadalquivir River. The natural aging process is called "en flor" in "Criaderas and Solera" system: blending fraction of this fortified wine over time with each other in a pyramid of barrels. The oldest and most complex wine is drawn off the final barrel for bottling. - Community Wine Reviews
