What a lovely, elegant white blend! Safed is a blend of Sauvignon Blanc, Semillon and Orange Muscat from Kismet Winery Estates, a little winery in Oliver in the Okanagan, B.C. who, although opened its winery doors in 2014, have been making wine from grapes on the family estate for over 20 years. The winery name, “Kismet” is the Punjabi word for “destiny” and Safed means “clear”. On the nose the wine is soft with light tropical flowers, orange blossom honey; on the palate, the wine is full and rich on the mid-palate and although Safed should be chilled, the key to bringing out the best in Safed is to NOT serve it frigid. After the first very cold sip, which revealed little of the wine, I let it stand for about ½ hour at room temperature before the second sip. That is when the wine started opening up in layers of tropical notes, more honey and finished with a lingering minerality. I’m sure the wine does go with light vegetarian curries as indicated on the wine bottle label, but we had it with steamed King crab legs and just a smattering of Meyers lemon juice. Just a lovely elegant wine and at less than $18 taxes in, its destiny is clear.
