This Niagara sparkling wine is crisp, toasty and dry. The wine was aged for 56 months on its lees and one year in oak barrels. There is no dosage or sugar added. It's a blend of 70% Chardonnay and 30% Pinot Noir grapes. Aromas of brioche and golden apple. Enjoy as an aperitif or companion to seafood.

A dry bubbly made from 100% organically certified grapes, 70% Chardonnay and 30% Pinot Noir. It is produced using the traditional method and spent 47 months on its lees.
Aromas of baked apple, rich buttery pastry, and hints of almond. It is opulent, creamy, yet crisp on the palate with baked apple flavours, lemon and a nutty finish. An affordable alternative to Champagne.

Tasted at the Taste Ontario event in April 2019.

Wine-Food Pairing: Pair with sushi, fried appetizers, Asian food, or fried chicken.
