For over 25 years, three generations of the Heiss family have been making Gray Monk Estate Wines with much loving care and attention to detail and their Pinot Auxerrois is no exception and they do Pinot Auxerrois well. The 2016 vintage is pale lemon in the glass and this off-dry (13.5 g/l RS), medium-bodied white is nicely balanced with ripe apple, pear, light honey and citrus flavours finishing with a gentle and light minerality. Wine grapes were harvested in late-September from three sites, fermented and aged in stainless steel tank to retain fruit freshness and expression. Don’t overchill the wine because you will miss its delicate nuances. Lovely and so delicious on its own but is also a perfect pairing to fresh steamed crab and poached sockeye salmon with a white wine cream sauce.
