This is a dry woody wine. On the nose there is a wonderfully delivery of intense cooked plums, red cherries and black currant jam. There are herbs of thyme and rosemary with a woody energy of herbacious border undertones.
On the palate there are again the red cherries and the cooked plums, the rich luxurious tones of the black currant jam and dried dates. There is a slight orange zest before the release of the thyme and rosemary herbs. There are vegetal notes of tomato vine and damp cigar leaves. Tones of licorice marry well with coffee beans. The tannins are firm and release to spice notes of nutmeg and black pepper. There is a great length on the finish.
This would pair well with strong flavoured meats. Steaks, bison and boar. Tomato based dishes would also be a great match and spice based dishes like those with a chipolte adobe sauce.
