VINEYARDS
About 100 kilometers from San Francisco and sitting at the foot of the Sierra Nevada Mountains, California’s Central Valley produces Cabernet Sauvignon fruit of outstanding quality. Consistently favorable weather conditions create an environment during the growing season in which the grapes enjoy plenty of hangtime. Not only does this growing center enjoy the benefits of the natural protection and favorable microclimate influenced by the mountains, its soil is rich in minerals.
HARVEST
The spring and summer weather was moderately warm which helped mature the fruit throughout that time. This was followed by a cool fall which was ideal for extended hang time on the Reds; allowing tannins to soften and color bleed to develop. The winemaking team worked with the viticulture team to ensure that some light late season rain did not force Cabernet Sauvignon to be harvested before it was ready. The resulting wine rewards the consumer for the team in the fields hard work.
WINEMAKING
As soon as the harvest reached the winery, the winemaking team began their daily tasting of the wine. The wine was fermented in upright tanks with particular focus on the pump-over regime to ensure ideal extraction conditions for the ripe grapes. A hint of oak was employed to emphasize spicy and nutty notes.
TASTE PROFILE
The 2008 vintage is medium bodied with a smooth finish. This wine showcases sweet aroma's of fresh dark red fruit, such as blackberry and raspberry with a round, rich mouthfeel
