Ernie Els 2016 Cabernet Sauvignon is fragrant with mint, baked plums and liquorice aromas on the nose, full-bodied with dark plum, blackberry, meaty and dried herbs flavours fleshy and textured on the palate. Produced from 100% Cabernet Sauvignon with fermentation in seven-ton open-top stainless steel tanks. The wines were pumped-over and punched-down manually up to five times per day ensuring maximum color extraction from the skins. Maceration period was 10-16 days before pressing. Aged 17 months in 300-litre French Oak barrels, 20% new. Pour with a beef ribeye from the grill. - Community Wine Reviews
