This cool rum was made on a 250 year old wooden pot still. It is part of a series of single still rums from El Dorado. This one was made on an ancient greenheart wood still.
The others being the soft and generous Enmore, and aggressive Port Mourant.
This one has a delicate, sweetly fruited side to it. It has more in common with the Port Mourant, as far as character goes. Pepper, earth, leather, coffee bean, vanilla, and a fruity character like table grapes or plum.
A beautiful golden amber colour.
Comparatively, the Enmore is more in line with the other rums in the El Dorado portfolio, since some of it is blended into the 12 y.o. amd entry level. It is soft and chocolatey. Orangey too.
The Port Mourant is a bit spicier than this one. Maybe more attitude. This one is subtle and inviting. This is a perfect contemplating rum.
The El Dorado Versailles Single Still Demerara Rum is distilled in a single wooden pot still. The greenheart wood used for the still, also known as Demerara greenheart, is native to Guyana and is incredibly durable. In the 1920s, the polar exploration ships Fram and Endurance each had a layer of greenheart wood affixed to their hulls to help protect them from ice damage. - Community Wine Reviews
