Richly layered flavors of ripe granny smith and golden delicious apples, apricot and cinnamon. A wonderful substitute for vidal icewine. This is apple pie in a glass. Yum!

Ice Cider food pairings: foie gras, hard cheeses, fruit flan.

Courtney Flood rated this wine as 90/100 with the following review:

Excellent ice wine alternative, Quebec makes fantastic ice cider. Rich balance of sweet, tangy, concentrated apple. Very beautiful and balanced.

Great Blue cheese wine pairing! Enough body and sweetness to balance a strong salty, bitter blue.

My favourite way to serve blue cheese is in a cheese platter for dessert. Pair with fresh baugette, and a homemade fig jam: bring to a simmer in a small saucepan about 10-12 dried figs, 1/2 cup of water, 1/4 cup of honey, and a tbsp of balsamic vinegar. Simmer on medium-low for about 10 minutes. Remove from heat and puree with an immersion blender.

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
