Domaine du Colombier 2020 Chablis is made in the Old World Burgundian style and is fresh with green apple, white florals and flinty mineral aromas on the nose. Bone-dry with bright green apple, white florals, liquid lemon juice and flinty mineral flavours racy on the palate. Chill and enjoy with oysters on the half shell. Domaine du Colombier has been a family business since 1887. When Guy Mothe took over the property in 1957, the focus was on making Chablis. Now, his three sons Jean Louis, Thierry and Vincent operate 51 hectares of vineyards.

Chablis food pairings: scallops with a sesame ginger dressing, grilled seafood, spinach and pepper jack stuffed chicken, cheese.

Lively aromatics of gala apple, honeydew and lingering white floral blossoms. Flavours repeat on the palate with apple and notes of freshly cut pear and melon with a saline infused finish repeating with delicate granite stone minerality. Light bodied with a crisp, dry finish. This would pair nicely with fresh oysters alongside a delicate mignonette and soft creamy cheeses. Worth seeking out if you enjoy Chablis! - tasted July 2022
