Toasty and earthy rather than fruity Spanish sparkling wine. Still refreshing at an exceptional price. Cava is the Spanish term for bubbly and translates to "cave." Buy by the caseload for holiday parties. Love the refreshing acidity here to enjoy this wine as an aperitif or companion to fried chicken. This sparkler is a blend of 40% Parellada, 30% Macabeo and 30% Xarello grapes and the producer uses the classic Champagne method for the second fermentation in the bottle.

Cava food pairings: turkey, cheese, shellfish.

An organic brut nature Cava from Penedès Spain. Brut Nature" indicates that this wine was made without dosage, i.e., the sweet wine added to traditional-method sparklers just prior to bottling to offset the high acidity making it exceptionally crisp and bright with bracing acidity. Pronounced aroma of sweet apple and pear with a touch of citrus and lots of fine bubbles. Apple and pear taste continues to the palate, along with a nice, bright and refreshing mouth feel. We had this with Swiss cheese fondue, including grapes, crisp apple and spicy sausage for dipping. Wonderful match.

An outstanding value for sure. Aromas of lemon pith and zest, yeast, and an earthy, mineral hint. Mousse is bright and fresh, with mouthwatering acidity and tart, crisp fruit on the palate, combined with earthy and yeasty notes and a dry finish. Perfect to accompany oysters or any fresh shellfish.

A bright and lively organic Cava from U Mes U winery. Delicate and dry with a crisp mousse and medium fluffy bubbles. Aromas of sliced pears and almond cookies. Flavours show green apples and yellow plums finishing with a brilliant grapefruit citrus zing. This would pair nicely with pretty much anything with creamy cheeses, stuffed mushrooms or baked escargot. The sky’s the limit! Enjoy - tasted November 2020

A star you can drink?

If you peered at the Cygnus Constellation in the night sky through a telescope, you would see a supergiant yellow star called Sador.

Astonishingly, it's the star's name that stands as the inspiration for this cava! What a gorgeous idea! Indeed, the constellation map can be found on the label.

It's a really outstanding, fresh, bracing (award-winning!) cava, for any times but especially for these times. It shows as pale lemon, with a very pale gold-green glimmer. On the nose, it's a provocative blend of a big grapefruit, lashings of lemon rind and lemon, with toasty notes. This carries through to the palate, with some ripe grapefruit notes added, and a white pepper note with a bracing minerality. It's medium-bodied, with a cream-like consistency cut by high-acidity. At 11.5% a.b.v., it is a Brut with 5 g/l residual sugar. It runs to a long finish.

Made by U MES U Winery (formerly known as 1+1=3), it's an utterly delicious fresh cava for aficionados, definitely a cut above most.  Made using the traditional champagne method - with the second fermentation in the bottle - this one blends traditional cava grapes, Xarel·lo 40% , Parellada 40%, and Macabeo 20%. From the Alt Penedès region, the grapes were grown at 350 metres above sea level.
Aged for at least 15 months on the lees in the bottle, this wine is sans dosage.

It's Certified Organic by the Consell Català de la Producció Agrària Ecològica (CCPAE) and certified Vegan by the European Vegetarian Union (EVU). Both require ongoing third-party audits and post their standards on their respective websites.
Cygnus Brut Nature Reserva is a Cava made with organic wine grapes. The blend is 40% Parellada, 30% Macabeo and 30% Xarello grapes reduced in the classic Champagne method for the second fermentation in the bottle.
