If the Rare Vintage Pinot Noir is the lead violinist, even ethereal viola, the Black Paw is the richer, deeper cello for 2013. Fleshy ripe black cherry, yet balanced again with that racy acidity. Deft craftsmanship. Pair with duck comfit.

Pinot Noir food pairings: lamb, roast duck, lighter cuts of beef, creamy cheeses (Brie, Camembert), Niagara Gold or Lancaster cheese.

A unique and impressive bouquet of cran-cherry, spice, flint, and underbrush. The palate is dry and textured, making it ideally suited for grilled pork tenderloin, or lollipop pork chops with Dijon aioli. Tasted April 2016. 90 points. Matt Steeves - www.quercusvino.ca
The wine is comprised of exclusively estate fruit, from the Black Paw Vineyard, all of which was hand-harvested for superior quality. The fruit was fermented in small lots and punched down by hand several times daily over 14 days. The wine was aged 15 months in exclusively French oak barrels, with 20% new oak, and bottled in Mar15
