Produced by winemaker, Jean-Marc Lafage, from Maury in the Midi wine region, Château Saint-Roch's Chimères is a deep, dark purple, full-bodied red wine blend of 40% Grenache and 30% each of Carignan and Syrah. Lush and layered with liquid cherry, dark berry compote, dried wild herbs, flinty finishing with pepper spice on the palate. Matured in concrete tank and large oak casks. Enjoy now and over the next three years.

Food pairings: smoky game burgers, beef steak, rack of lamb.

Chateau Saint-Roch is well established in the value for money category and this is no exception. Vibrant, fresh fruit on the nose and palate. A bit of candied fruit on the finish but overall a pleasant and substantial pour. Pair with cassoulet or duck confit. Tasted February 2020. www.thewineloverskitchen.com

A blend of Grenache, Carignan and Syrah from southern France by the Mediterranean, there are dark berry and mineral aromas leading to a very smooth dark berry palate. Medium acids and tannins and a dry finish. Decant or age further. So versatile with food- pair with beef, lamb, roasted vegetables, mushrooms and appetizer with Spanish spicing. Tasted February 2020.
Château Saint-Roch Chimères 2017 is a lush and savoury, full bodied 40% Grenache with equal amounts of Carignan and Syrah red wine blend fermented in demi-muids after maceration in stainless steel tank. Love the fresh mushroom, raspberry, ripe dark cherry and plum, baking spice flinty flavours the palate. Beautiful bright acidity to match and finishing long with flinty mineral flavours smooth and supple on the palate. - Community Wine Reviews
