Collovray-Terrier make a few differenr wines sourced from the area in Languedoc known as Limoux. This wine is pretty different to their other one, dubbed "Les Gravas," which is quite hefty. "Les Grands Penchants" has more vitality and is much more delicate. Apparently, they began the fermentation process with a very gentle crush performesld by the weight of the grapes in the vat. This may be the source of the freshness this wine exemplifies. The wine did undergo malolactic fermentation, but there are no apparent mentions of oak aging.
Pale lemon hue, with a watery rim.
Aromas of lemon cake, lily of the valley, fresh wheat, lemon juice, and pear.
The flavours have quite a bit of coiled acidity that springs out; very fresh and pleasant.
Sweet pea, citrus, lemon candy, honey, and only slight autolytic hints from fermenting on lees.
This would go well with goat cheese and peaches on an arugula salad, or maybe canteloupe.
This wine is brilliant yellow, with flashes of green. A nose full of mature fruit and flower. On the palette it is ample and beautifully structured, rich an elegant fruity wine with fresh, mineral finish.
