The 2022 Caymus California Cabernet Sauvignon is a masterclass in balance and boldness. The nose reveals a bouquet of blackberry and lush cassis with a touch of espresso. There's a hint of baking spices that adds an intriguing complexity, suggesting cinnamon and clove. On the palate, it's nothing short of indulgent. Full-bodied and rich, the wine unfolds in luxurious waves of black cherry, blueberry, and juicy plum. The tannins are robust yet remarkably smooth, creating a velvety texture that carries through to a long, elegant finish. Pair with braised lamb shanks infused with rosemary and thyme and a side of creamy Parmesan polenta. A wild mushroom and truffle risotto would add an extra touch of luxury. For the grand finale, a dark chocolate tart sprinkled with sea salt.
