Full-bodied and balanced cool-climate Niagara chardonnay with nicely calibrated oak and golden apple notes. Pair with roasted chicken.

Chardonnay food pairings: grilled or poached salmon with cream sauce; pan-fried shellfish; chicken pot pie; cheese casseroles; stuffed Cornish hen; lemon-roasted chicken; pork with apples.

Meticulous and intentionally cool-climate in style. Juicy, balanced, and bright. Cave Spring sourced this Chard mostly from Beamsville Bench and with 15 percent from the Creek Shores area.
Soft, and pale white colour. Bone-white.
Such nice white fruit: peaches, pears, yellow apple, vanilla, coconut meat, and a touch of pie crust.
The fruit on the palate are terrific. Lots of more white fruit. More peach, nectarine, apple, and honey glaze.
There is no malo-lactic, and the cuvee was split between neutral steel and old French oak (mostly steel). Interestingly, the cuvee is only MOSTLY Chardonnay. 19 Percent of the wine is actually Chardonnay Musque; an aromatic mutation of Chardonnay. It is fruitier and somewhat tropical.
Could age for 3-5 years.
Pair it with shrimp skewers and a cobb salad.

Cave Spring, located in Jordan, on the bench of the Niagara region, exploits an amazing winery renown for its Riesling and Chardonnay. The Chardonnay 2016 shows aromas of yellow apple, pineapple, citrus blossom, saline, butter and crème brûlée. This cool climate Chardonnay exposes freshness on the palate, with a sweet taste of tropical fruit, pineapple, meyer lemon, salt, pie crust and hazelnut. Enjoy.
