A remarkable Niagara sparkling wine made from 100% Chardonnay grapes. Toasty beautiful with green apple freshness and layers of refreshment, like ocean spray on a warm summer's day. The vines are planted in limestone clay soils on the benchlands of the Niagara Escarpment. The wine is aged sur lie in the bottle for a minimum of 30 months prior to disgorging. Terrific minerality and persistent mousse. Wow.

Sparkling food pairings: cold chicken and watercress sandwiches, smoked salmon on baguette, seafood hors d'Ĺ“uvres.

Made in the traditional method from 100% Chardonnay that was grown in limestone rich clay. It was aged a minimum of 36 months on its lees. On the nose, it has aromas of ripe pear, pie crust, citrus notes and marzipan.

On the palate, it is dry, medium-bodied, creamy, with lots of fine bubbles. It is fresh with lemon flavours, hints of almond biscotti, and a slightly bitter finish. The flavours linger. An excellent dupe for Champagne.

Tasted August 2019.

Wine-Food Pairing: Pair with seafood salad, salty tempura fried appetizers, or go ahead and indulge with caviar.

Elegant nose leading with apple, lemon, and a touch of oxidation with brioche, grapefruit, and limestone minerality poking through in the background. Crisp lemon on the palate supported by apple, biscuit, and almond into the finish. Good presence and texture, a creamy mouthfeel balanced by tart acidity. 60/40 blend of Chardonnay and Chardonnay Musque that saw 45 months sur lie before being disgorged in March 2018. Serve with oysters on the half shell, buttered lobster or crab, calamari, or buttered popcorn.

Cave Spring's Blanc de Blanc is an all-Chardonnay traditional sparkling. It's a good example of a solid value sparkling that delivers consistent quality.
The colour is quite pale - white, with delicate yellow/green hues. The bubbles are persistent and fine.
Aromas are vibrant and mouthwatering. Cave Spring's CSV Brut receives an intense 65 months on lees. The non-vintage receives 30 - still more than most traditional sparklings get. It means this one has a lot more fresh primary fruit to it. Lots of peach, assorted citrus, asian pear, quince, graphite, jasmine tea, and pastry dough.
Lively, youthful, and full of cool climate purity of fruit. Nectarine, lime juice, apple skin, muskmelon, and more pastry dough leesiness. Highly refreshing minerality translated through Niagara's dolomitic limestone.
Begin a meal by pairing this sparkling with assorted charcuterie. Epoisses and lavender honey were particularly excellent.

Tasted Nov. 13th at wine club. Colour gold yellow bubbles disappear quickly. Aromas and flavours of apple and pear, but the taste was seeming to be off. All members thought the same. This bottle could have been returned. Given other reviews the sparkler is worth another try.??
Cave Spring Blanc de Blanc is an elegant and medium-bodied Sparkling white made from 100% Chardonnay wine grapes from the Niagara Escarpment wine region and in the traditional method as in the making of champagne. Bright peach, quince, citrus and baked good flavours brought to your palate by a creamy and persistent. A lovely, refreshing bubble at a great price point. - Community Wine Reviews
