Love it! Muscular, rich, toasty and full-bodied… just like James Bond who loved this bubbly. Spectacularly well-made… you will never, ever be disappointed with it… or will I if you give it as a gift.

Hints of roasted apples, spiced apple compote, peaches greet your nose after your eyes have been seduced by the fluttering of fine bubbles in that golden champagne color indicative of a Pinot Noir predominant blend. Full-bodied and toasty pretty much sums it up but also perhaps oversimplifies the aromatic complexity of this champagne. Creamy on the palate with notes of brioche, pear, green apple – with some spicy and a bit of walnut that all goes down on the velvet of the very fine Bollinger bubbles. 12% alc. Between 8 -9 gr. Dosage. Drink now or keep up to 8 years. The secret to this iconic NV champagne is that it is mostly reserve wine, some aged in magnums for over 15 years in the Bollinger cellars in Aÿ, blended with harvest grapes. And, as any champagne aficionado knows, champagne ages superbly in magnums, a process that helps it acquire that biscuity, toasty quality so emblematic of the best champagnes. Over 85% of this blend is Grands and Premiers Crus; 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier.

The nv Special cuvée brut is pale gold and 12% abv. This wine is toasty, dry to slightly off-dry, with creamy fine vigorous effervescence which keeps bubbling on the tongue and on the upper palate. Showing rich almond and yeast expression explode out of the bottle with the cork, this wine carries the lees into the glass and shares its freshly baked apple brioche, dried apricot and marzipan dominant aromatics with a delicate citrus and floral secondary layer. Full bodied with very well integrated fruit. Persistence of apple and dried apricot with a long elegant finish. This wine pairs well with almost anything and is ready to enjoy now.

A superb and absolutely memorable bubbly like no other! I can see why this is James Bond's bubbly of choice! This Champagne pours with a brilliant golden hue and hundreds of fine vigorous bubbles. The aromas are so pronounced that they make their presence known from just the popping of of the cork! Key aromas include yellow delicious apple, pear, lemon and orange zest, dried apricot and freshly baked goodies (almond croissant and apple danish). This bubbly is rich and creamy on the palate with a long toasted almond and baked apple finish. Acidity, creamy mouthfeel and off-dry sweetness all balance harmoniously. Pair this top-notch non-vintage Champagne with a very special occasion; or with oysters ;) - Tasted Dec 2015.
