Vintages Wine Panel: ‘Le Origini’ Amarone is from almost fully dried grapes. Fermentation takes place for 15-20 days in 500- liter tonneaux (casks). Twice a day the cap is punched down into the liquid. Later, the skins are pressed to extract even more color and flavor concentration. The wine is aged for 27 months in the same cask used for fermenting, then bottled and held for at least a year before release. The resulting wine is very intense and rich with wonderful aromas of dried fruit, chocolate and vanilla bean. My note: Terrific extraction and fruit purity here. Aromas of blackberry, blueberry paste, crème de cassis, ground black pepper, mocha and cigar box. Good grip from the tannins and a terrific finish.

Amarone food pairings: braised ribs, bean-based dishes, roast beef, cheddar, Chinese spareribs.
