Dark cherry and cedar smoke on the nose of this fairly robust Oregonian Pinot Noir. Lots of mouth-watering acidity. Pair with seared salmon.

Could time in the cellar tame the acidity in this Oregon Pinot Noir? Dark cherry, vanilla, dried herbs on the nose. Black cherry, pepper, oak, smoke and high acidity. Needs food.
Planked salmon, rosemary encrusted pork, roasted duck.
