Comfort of Home Sherry Potatoes

George and Tabitha know how precious it is to spend time together with their children. This is George’s favourite recipe and he shares it with everyone he knows. George and Tabitha’s own childhoods were very rough and many predicted they would never make it, but they did. They have made it and did so in spades!

Serves 4
Level of Difficulty: Easy

Olive oil spray
4 medium sized potatoes cut thin into ¼” slices
½ cup melted butter
½ cup dry sherry
salt and pepper

1. Layer the sliced potatoes in a casserole dish that was sprayed with olive oil.

2. Mix the melted butter and sherry together and pour the mixture over the potatoes. Be sure to cover the potatoes well. Add salt and pepper to taste.

3. Bake uncovered at 375°F for an hour.
