Avocado and Papaya Salad

Serves 4-6

Level of difficulty: easy

Ingredients

2 avocado, half ripe
2 papayas, not to soft
3 limes
1 small red onion, minced
1 small red chile pepper, finely minced
1 tsp fresh ginger, finely minced
2 scallions, white part only, cut thin
1 tsp fresh mint , sliced thin
s and p to taste

Instructions

peel and pit the avocado and slice into wedges about 8-10. Peel and seed the papaya and slice into wedges about 10-12. juice the lime into a glass bowl and add the red onion, minced chile and ginger to meld flavors for about 5 minutes. Add remaining ingredients and toss gently. Season with s and p to taste and serve right way
