Suave and delicious, this Cab Sauv is a great value from a producer is a giant in Washington State wine. Columia Crest/Chateau St. michelle own the vast majority of what grows across the state. The region's wines are becoming known for epic levels of ripeness, structure, and concentration. The weather can be so extreme that the vines are stressed significantly, which leads to excellent fruit quality.
Aromatically compelling. It has dried cranberry and toasty oak on the entry. Effusive, with a dried herb note that balances out the fruit.
The palate has great acid balance. The nights get rather cool in parts of Washington - helping the aromatics and acid levels. Jalapeno jelly, cranberry, cherry, cocoa, and chickory coffee.
This wine is no slouch. Lots of energy. It has a lot of red fruit, so it could be more versatile with a range of grilled meats, as well as hearty fall soups.
