Et oui! Le porto blanc existe bel et bien. On ne l'élabore pas bien sûr avec les mêmes cépages que pour le porto rouge mais il s'agit bel et bien dans les deux cas de vins mutés. Il en résulte un vin qui affiche un taux d'alcool qui oscille autour de 20% avec un goût très sucré car il contient passablement de sucre résiduel (136 grammes de sucre par litre dans ce cas-ci!).

On recommande parfois de servir du porto blanc en guise d'apéro mais je le préfère personnellement soit seul en guise de dessert (ou digestif) ou accompagné de desserts pas trop sucrés (le vin l'est déjà amplement) où les fruits, les agrumes, le miel ou la gelée d'abricot sont présents. Miam!

La maison Ramos Pinto a été fondée en 1880 et possède plus de 360 hectares de vignes ce qui lui assure une stabilité dans son approvisionnement de matière première. Elle commercialise de nos jours autant de vins tranquilles que de vins mutés. Elle a été intégré en 1990 au groupe Roederer.

Notes de dégustation:

La couleur jaune dorée du vin nous annonce déjà que l'on a affaire à un vin riche et capiteux. Ses arômes de fruits exotiques et confits aussi d'ailleurs. Si on a la bonne idée de le servir assez frais, la bouche grasse et pleine de ce vin saura conserver son équilibre. Belle persistance des saveurs. Une bouteille suffira pour 6 à 8 convives en fin de repas. Surprenez-les avec un porto blanc!
