The wine makers’ decision to have medium bodied Chardonnay rest on its lees in oak barrels for 12 months is unmistakable, adding layers of complexity and beauty to this creation from Ontario’s St. David’s Bench appellation.

For me, pleasing scents reminiscent of honey, churned butter, ripe green apple and oak spice mingle nicely with this wine’s centre stage flavours. They taste like ripe apples, sun-dried citrus and nut-butter to me. But the story does not end there. The lees ageing and months of oak contact have collaborated to summon a lovely combination of creamy texture and mild acidity.

I’ll serve this with fish that craves a dose of butter.
