Add some sophistication to your St. Patrick’s Day Celebration
St. Patrick’s Day is right around the corner and there’s no better way to celebrate than with a Sunday soiree full of good wine and Canadian cheese. When throwing a St.Patty’s Day get-together, I recommend making this fabulous homemade nachos and cottage cheese dip.
Made with Canadian Cottage Cheese, guests will swoon over the dip’s soft and creamy texture. Splashes of green chives and cilantro make it perfectly on theme for the occasion. The best part? It only takes about ten minutes to prepare.
A great wine to go with the dip is an extra dry classic Chianti called Castello D’albola Riserva. It will balance out the crunchy texture of the chips and wonderfully complement the rich, cheesy flavour of the dip. Whether you’re Irish or not, it’s the perfect recipe for an unforgettable day. Homemade Nachos and Cottage Cheese Dip
Ingredients:
Oven-baked nachos:
1 egg white
½ tsp (2 ml) chili powder
¼ tsp (1 ml) ground cumin
1 pinch garlic powder
Salt and freshly ground pepper
6 small whole wheat tortillas
Dip:
2 cups (500 ml) Canadian Cottage Cheese
2 tbsp (30 ml) olive oil
¼ cup (60 ml) fresh chives, chopped
¼ cup (60 ml) fresh cilantro, chopped
Salt and freshly ground pepper
Preparation:
Preheat oven to 425°F (220°C).
In a bowl, mix egg white with spices.
Brush tortillas with egg mixture, cut them into slices and place them on a baking sheet lined with parchment paper.
Bake in the oven for 5–7 minutes or until tortilla slices are as crispy and golden as chips.
Meanwhile, place Cottage Cheese in a bowl, sprinkle with olive oil and fresh herbs, and season with salt and pepper.
Place nachos in a bowl and serve with Cottage Cheese dip.
