The only thing scary this Halloween is not having tried this tasty Cheddar Orzo Salad.
This salad comes packed with flavour from the bold characters of the Canadian Smoked Cheddar to the refreshing green Swiss chard.
This salad is so delicious even the trick-or-treaters will want a taste!
To get the best ingredients I shop local – right down to the cheese I use. Right now I’m obsessed with the intensity of Cows Creamery Appletree Smoked Cheddar and love how it tastes mixed with orzo, grapes, and chicken.
To top it off I pair it with a rich and savoury red wine like this 2013 Thirty Bench Red.
INGREDIENTS:
1 cup (250 mL) orzo
1⁄3 cup (75 mL) canola oil
1⁄3 cup (75 mL) red wine vinegar
2 tsp (10 mL) Dijon mustard
5oz (150g) Canadian Smoked Cheddar, cut into cubes
1 bunch of Swiss chard, your choice of colour (about 6 cups – 1.5 L), thinly sliced
1 1⁄2 cups (375 mL) green and/or red grapes, halved
1 1⁄2 cups (375 mL) cooked chicken, shredded
Salt and freshly ground pepper
PREPARATION:
Cook orzo according to package instructions. Rinse with cold water and drain.
In a large bowl, mix oil with vinegar and mustard.
Add remaining ingredients; mix well and serve.
