Natural Pacific Rock Oysters with Lemon
Ingredients:
12 Rock Oysters
Rock Salt
Lemon
Method:
Freshly shuck the oysters and carefully cut the oyster free from the shell.
Remove any broken shell, check the oyster is clean.
Be careful not to lose any of the natural juices.
Serve 12 oysters on a bed of rock salt with lemon halves wrapped in cheese cloth.
Tempura Oysters with Soy & Sesame Dressing
Ingredients:
12 Rock Oysters
Tempura batter
¼ cup corn flour
¼ cup plain flour
½ cup iced water
½ cup lemon juice
Soy & Sesame Dressing
Ingredients:
1 tablespoon sesame oil
1 tablespoon light soy sauce
2 teaspoons wasabi paste
1 tablespoon hot water
1/3 cup extra virgin olive oil
Method:
Sieve the flours into a bowl, whisk in the water and lemon juice, add a pinch of salt, it should be smooth and free of lumps. Keep refrigerated.
Dip 12 oysters into flour then into tempura batter and deep fry till crisp.
Drain on paper towels then place back into clean oyster shells.
Serve with soy & sesame dressing on the side.
To Serve:
Arrange two of each oysters on plates and serve with tempura oysters hot crisp from the fryer.
Oyster Shooter Mix
Ingredients:
12 Rock Oysters
2 egg whites
Juice of 1 lemon
1 tablespoon lemon vodka
Method:
Place all ingredients in a jug and foam with a stick blender.
Place 12 oysters in shot glasses then top with a spoonful of foamed shooter mix.
Garnish with 1/8th teaspoon of caviar (you can use Tobiko caviar).
