Delicious Curry Rice with Cheddar Recipe

 

Spring Eating: Satisfying meals with Canadian cheese

With summer on the way, fresh eating is on a lot of people’s minds. There’s nothing like a dish filled with crisp, delicious produce to really put a spring in your step. A big salad with a helping of your favourite Canadian cheese can be a delicious way to get your veggies, but there are lots of great alternatives for satisfying, delicious entrees with an emphasis on freshness.

This recipe is the perfect example of how to put together a light, satisfying meal. It’s all about rich flavour without too many rich ingredients. Cheddar in a curry-flavoured dish might sound unusual but it’s truly a great combination.

CURRY RICE WITH CHEDDAR

•    Prep. time 25 mins
•    Yields 6 servings

What You Need

3 cups (750 ml) cooked Basmati rice
1 cup (250 ml) halved cherry tomatoes
1 cup (250 ml) diced, seeded cucumber
1 cup (250 ml) diced yellow bell pepper
1 cup (250 ml) halved green grapes
¼ cup (60 ml) chopped red onion
1 tsp (5 ml) curry paste or powder
¼ cup (60 ml) olive oil
3 tbsp (45 ml) white wine vinegar
Salt and freshly ground pepper
5 oz (150 g) Canadian aged Cheddar, diced

Instructions

Toss rice with fruit and vegetables.
In a bowl, combine curry, oil and vinegar. Season.
Drizzle dressing on rice mix, and mix to coat well.
Add cheese, toss and serve.

Change the cheese

Canadian Gouda, Feta, Havarti and Mozzarella are great alternatives to Canadian Cheddar, just be sure to adjust your wine pairing accordingly. You can find great pairings for all your favourite cheese at our website.

Wine pairings

Cabernet, Rioja, Sauvignon Blanc traditionally pair well with cheddar. But a light spring meal might call for a light wine. Go for a white zinfandel or rosé if you like a bit of sweetness, if you’re more into dry wines a crisp pinot gris, pinot grigio or muscadet will do the trick.
