A crisp, fresh and vibrant Ontario bubbly with aromas of toasted bread, green apple and lime zest. Made using the traditional Champagne method of the second fermentation in the bottle. Pair with shellfish or fried chicken.

Produced from 70% Chardonnay with the balance in Pinot Noir this is a lovely, refreshing, amazing value traditional method bubble under $35. Citrusy with bright apple, red berry, bright stone fruit and lemon zest flavours delivered on a toasty, fine and persistent mousse vibrant and lingering on the palate. So good! Chill and enjoy it with lox, cream cheese and a baguette or brunch dishes. But mostly, just chill and enjoy it. Tasted June 2022.

Gorgeous Ontario sparkler! This is a non-vintage blend (70% Chardonnay, 30% Pinot Noir) is made in the traditional method. Aromas include creamy lemon, yellow apple, and fresh bread. Light and vibrant, with a bright, fizzy mousse, mouthwatering acidity and crisp citrus and yeast on the palate. Enjoy with oysters or any seafood.

A Niagara traditional sparkling wine made predominantly with Chardonnay and some Pinot Noir. Brut means the wine has low sugar (8 g/l) which is the way I like my wines!
Fine perlage and crisp acidity. Aromas of citrus, apple and some brioche. The flavour was like biting into a fresh green apple. Mouth watering with a long finish. I had just visited a speciality cheese shop so I paired it with some “Bitto” Alpine Cheese from Lombardy. Delightful! Tasted March 19/22 #vqa #ontariowine

Pronounced aroma of honey apple, lemon, blossom and biscuit. Lots of fine bubbles, dry, medium plus acidity and light bodied . Honey apple and lemon, along with citrus zest made it to the palate. Paired well with components of mixed board; rosemary baked ham and asparagus, creamy burrata cheese on rosemary raisin crackers, spicy kale dip and assorted crisp vegetables, lobster pate on bagels and salty gherkins. Pleasant with rich buttery shortbread and strawberries.

NV Brut from Trius. Made using the classic method from a blend of Chardonnay and Pinot Noir grapes, the aromas are invigorating - Green apple, white grapefruit, clay and limestone notes. Flavours are succinct with an evolution of lime citrus and a touch of fresh herbs. Dry, with well balanced bright acidity. Enjoy with fresh oysters and shrimp tacos.

The latest iteration of this NV Brut is composed of 70% Chardonnay, 30% Pinot Noir. Plentiful fine mousse, crisp and dry with nicely balanced citrus, lemon and biscuit aromas and flavours. Delectable and perfect as a celebratory fizz with light and fresh canapes. Tasted March 27, 2018.
This Niagara sparkling wine uses the method traditionale, or the traditional method used in Champagne for the second fermentation in the bottle to trap the bubbles. Since 1989, the winery has made this cuvee of grapes naturally fermented and aged in bottle.
