Produced by Paco & Lola Winery in Galicia, Spain, the grapes for Follas Novas 2021 Albariño were sourced from vines between 20- and 40-years of age that thrive in loamy-sandy, granitic and slightly acidic soils. The free-run juice was fermented in stainless steel tanks at 16C for 21 days and the wine rested on its lees for added structure and finesse. Floral on the nose with a subtle spritz of bright green apple, lime-lemon zest, dried white florals, fine herbs and briny mineral flavours on the palate. Chill and enjoy with calamari or salads. Vine growers and winemakers from the O Salnés region, in Galicia, formed the Cooperativa Vitivinícola Arousana which, in 2005, founded the Paco & Lola Winery.
