Produced by Collovray & Terrier, this southern French white wine from the Langudoc region is a blend of Chardonnay and Limoux Blanc grapes. Green apple and toasted almond notes. Pair with roast turkey.

Food pairings: Excellent aperitif with toasts and foie gras. Also goes well with seafood and grilled fish, and can also be served with poultry or goat cheese.

This wine comes from an area in Languedoc (Southern France) known as Limoux, typically known for their sparkling wine made from Chardonnay, Chenin, Pinot Blanc, but mostly Mauzac. For their still whites they tend to favour Chardonnay, like this one from Collovray-Terrier. They tend to be quite big and fat - they have quite a long ripening period in this area. The day is hot, but because they're planted in a mountaimous area the nights are very cool. This is ideal, if you are trying to coax aromatics out of the grapes.
The colour is a deep lemon yellow. Some oxidation has occured.
The aromas have a lot of lemon zest, brioche, wet wool, pineapple, golden apple, and some delicious buttery notes.
More fruit are evident on the palate - yellow plum, lemon, apple. Butter and clover honey as well.
This would be a really easy to understand introduction for a California or Australia fan looking to broaden their horizons.
This is a big wine that would go really nicely with chicken or corn chowder.

This wine is a pale gold. The nose is white, with notes of white fruits, white flower and spices. On the palette it is ample and beautifully structured, rich an elegant fruity wine with fresh, mineral finish.
