Nick Ryan (Prairie Creek's winemaker/owner/operator) has always had the desire to move back to the family farm in Merrick County. In 1999 while attending UNL, Nick was introduced to the science of winemaking through a class called "Vines, Wines, and You". After completing the class, Nick realized that the acres not suitable for growing a conventional crop would sustain grape vines. Four years later, in 2003, Prairie Creek Vineyards was born with 550 vines and 5 varieties on a plot of land owned by Nick's father Chuck. One year later 1100 more vines were added to the family. At this point Chuck could not resist (but tried to) being involved in daily operations, resulting in the current partnership.

Growing grapes was not enough to satisfy. In the fall of 2006, Prairie Creek Vineyards, along with Smokin' DAn's BBQ and Eureka Country Meats applied and recieved a Value Added Partnership Grant through the State of Nebraska. The amount granted was enough to erect a building. Modest equipment was purchased and the winemaking commenced on a large scale (Nick had been making wine in his basement all through college.)
