Jade Moon came into being in 2005 when we moved from Bermuda to Paso Robles and decided to make wine from Cabernet Sauvignon grapes grown on a nearby south-facing hill. During the fruit ripening phase the local temperatures reach over 100 deg. F in the afternoon but cooled by westerly breezes coming off the Pacific ocean, to the mid 60s F overnight. These conditions allow for full ripening of the grapes with a high sugar content, resulting in alcohol levels around 15%. The yield per acre is about three tons, giving the wine rich and concentrated flavors.
The label originated from a watercolor painting obtained by one of our relatives while visiting Vietnam to pick up their adopted daughter, whose name means 'Jade' The simple, but vivid colors are very distinctive, and the name 'Jade Moon' is an appropriate title for the wine.
