Hice Cellars is a multi-award winning winery located in the beautiful Applegate Valley in Southern Oregon. Our Ultra Premium wines are hand crafted in a style long forgotten by modern day wineries, almost every wine we produce is un-fined and un-filtered. Our wines are made in small lots, selected from organically grown vineyards, and hand harvested to ensure top quality is maintained. We use several techniques to enhance the wines varietal characters and flavors naturally. By cold soaking the fruit before fermentation, this brings out better varietal character, by using an extended maceration process we help naturally soften the tannins. With the exclusion of some white wines, all of the wine we produce is fermented in either open top bins or barrels. We use specific yeast strains which are isolated to exemplify each wines true flavor, body, and characteristics. We always pay careful attention to the smallest details which tend to help perfect the wines even further, we feel as in nature it's the little things that produce the greatest impact. Our vineyards are grown Bio-dynamically and organically without the use of pesticides or herbicides. We never use harsh chemicals or add phosphates to our wines, we calculate the molecular SO2 by the pH level to ensure far less sulfites than other mass produced wines, and we believe because of this careful handling our wines are not only superior but made in a style we call "organically conscious".
